
Avocado Pesto Pasta
This is one of my ABSOLUTE favorite side foods at the moment.
I am an AA (Avocado Aficionado) which means I love to add avocado to ANYTHING I can possibly think of!
Since I’ve been a Vegetarian my entire life, I have had to grow up finding different ways to get protein in my diet.
Avocados are RICH in protein and the healthy kind of fat that our bodies need.
Adding them in with pesto is a FABULOUS combination.
I made this dish as a side to my salad today. It was truly delicious.
